Roasted Cauliflower with Pistou


Raised on Olive Oil’s Roasted Cauliflower with Pistou is delicious and addicting. Biting into the roasted cauliflower you taste hints of the sweet olive oil. Then the flavors of the pistou take this dish to another level. This recipe is extremely healthy, but never skimps out on the taste!


Roasted Cauliflower with Pistou

Cooking Time: 30 Minutes

Servings: 2-4 people


Ingredients


  • 1       Whole        Cauliflower

  • 2       Tbsp.          Olive Oil

                                Salt and Pepper to Taste

  • 1/3 cup Pistou


Instructions


  1. Adjust rack to middle position of the oven and heat to 425 F.

  2. Take cauliflower and cut stem flush with the head.  Remove outer leaves.

  3. Rinse with water and dry with paper towels.

  4. Cut cauliflower into florets and place on a rimmed baking sheet.

  5. Drizzle florets with olive oil and lightly toss to coat.  

  6. Bake 15-20 minutes under cauliflower is gold and roasted.

  7. Transfer to plate and season with salt and pepper. 

  8. Dollop Pistou on roasted cauliflower and serve.
