Quick Mediterranean Farro Bowl
Enjoy this delicious Quick Mediterranean Farro Bowl for lunch or dinner! Farro is an ancient Italian wheat grain often eaten in the Mediterranean Diet. I like cooking with the 10-minute “Quick” Farro because it does not need long cooking like regular Farro. This bowl is filled with a variety of flavors and nutritional benefits.
Ingredients
Farro
1 ¾ cups 10-Minute or “Quick” Farro
1 Tbsp. Olive Oil
2 cups Low Sodium Chicken Broth or Vegetable Broth
½ tsp. Salt
Seasoned Cannellini Beans
1 15.5 oz. can Cannellini Beans, rinsed and drained
2 Tbsp. Olive Oil
¼ tsp. Granulated Garlic
¼ tsp. Salt
½ tsp. Dried Basil
Fresh Tomato and Cucumber Relish
2 cups 1” Diced Tomatoes or Tear Drop Tomatoes cut in ½
1 cup 1” Diced Persian or English Cucumber
2 Tbsp. Chopped Fresh Basil
¼ cup Olive Oil
2 Tbsp. White Italian Modena Vinegar or White Balsamic Vinegar
1 tsp. Salt
½ tsp. Garlic Powder
½ tsp. Cracked Black Pepper
1 cup Crumbled Feta Cheese
Instructions
In a 3-quart sauté pan with a lid add olive oil over medium heat until shimmering.
Add Farro and sauté in olive oil for 30 seconds.
Add broth, bring to a boil. Cover, reduce heat to low and cook for 15 minutes.
Let stand covered for 5 minutes.
Meanwhile make the Fresh Tomato and Cucumber Relish by gently folding all ingredients together until combined and set aside.
For Seasoned Cannellini Beans combine all ingredients in a small bowl and set aside.
Assemble bowls by dividing farro into 4 bowls and top with Fresh Tomato and Cucumber Relish, Seasoned Cannellini Beans and crumbled Feta Cheese.
Note: Italian Modena White Wine Vinegar or White Balsamic Vinegar is a great addition to anyone’s pantry. Trader Joes has a great Italian Modena White Wine Vinegar. Both vinegars are less acidic tasting and have more depth of flavor compared to regular red wine or white wine vinegar.
