Quick Mediterranean Farro Bowl

Enjoy this delicious Quick Mediterranean Farro Bowl for lunch or dinner! Farro is an ancient Italian wheat grain often eaten in the Mediterranean Diet. I like cooking with the 10-minute “Quick” Farro because it does not need long cooking like regular Farro. This bowl is filled with a variety of flavors and nutritional benefits.

  4. Let stand covered for 5 minutes.

  5. Meanwhile make the Fresh Tomato and Cucumber Relish by gently folding all ingredients together until combined and set aside.

  6. For Seasoned Cannellini Beans combine all ingredients in a small bowl and set aside.

  7. Assemble bowls by dividing farro into 4 bowls and top with Fresh Tomato and Cucumber Relish, Seasoned Cannellini Beans and crumbled Feta Cheese.

Note: Italian Modena White Wine Vinegar or White Balsamic Vinegar is a great addition to anyone’s pantry.  Trader Joes has a great Italian Modena White Wine Vinegar.  Both vinegars are less acidic tasting and have more depth of flavor compared to regular red wine or white wine vinegar.
