Fabulous Grilled Chicken Breast
I make this easy and versatile grilled chicken breast weekly. It is great to add to entrée salads, pastas, grain salads, chicken sandwiches and wraps.
Ingredients
3 lbs. Organic Boneless Chicken Breast, skinless
2/3 cup Olive Oil
3 cloves Garlic, crushed
1/3 Tbsp. Chopped Fresh Basil
1 Tbsp. Grated Lemon Zest
½ tsp. Oregano
1 ½ tsp. Salt
¼ tsp. Black Pepper, fine
1 pinch Red Chile Flakes
Instructions
Combine all marinade ingredients except chicken in a liquid measuring cup. Whisk until combined.
Place chicken in a 1 gallon Ziploc bag and add marinade.
Marinate for at least one hour or up to 24 hours.
Preheat BBQ Grill on medium for 15 minutes.
Spray grill with nonstick spray and place chicken on the hot grill.
Grill chicken for 8-10 minutes per side or until 168ºF is achieved in the thickest part of the chicken breast with a meat thermometer.
Notes: Grilled chicken may be cooled and frozen for up to 6 months.
