Mushroom Farro Pilaf


Farro is an ancient Italian wheat grain often eaten in the Mediterranean Diet.  I like cooking with the 10-minute “Quick” Farro because it does not need long cooking like regular Farro.  It has a delicate chewiness with a nutty flavor.  Enjoy Mushroom Farro Pilaf as a great side dish of a light lunch with a salad. 


Mushroom Farro Pilaf

Cooking Time: 25 Minutes

Servings: 4 People


Ingredients


  • 1 ¾                      cups                     10-Minute or “Quick” Farro

  • 2                          cups                      Low Sodium Chicken Broth

  • 3                          Tbsp.                   Olive Oil

  • 2                          cloves          Garlic, minced

  • 10                        oz.                        Sliced White Mushrooms

  • ½                         tsp.                      Onion Salt

  • ½                         tsp.                      Garlic Powder

  • ½                         tsp.                       Black Pepper

  • 2                          cups                     Coarsely chopped spinach or arugula

  • ½                         cup                      Crumbled Feta Cheese


Instructions


  1. In a 3-quart sauté pan with a lid heat olive oil over medium heat until shimmering.

  2. Add garlic, mushrooms, seasons and sauté for about 2-3 minutes.

  3. Add Farro and broth, bring to a boil.  Cover, reduce heat to low and cook for 15 minutes. 

  4. Let stand covered for 10 minutes.

  5. Add coarsely chopped arugula or spinach.

  6. Portion onto plates, top with crumbled feta cheese and serve.

     

    Note: 10-minute “Quick” farro may be found at most grocery stores and online.  I like the Trader Joe’s 10-minute farro.  Vegetable broth may be substituted for chicken broth.
