Mediterranean Egg Scramble
Mediterranean eggs are a great way to start the day, but also a great option for a vegetarian meal.
Ingredients
1 Tbsp. Olive Oil or Olive Oil Nonstick Spray
4 large Eggs
½ cup Grape or Cherry Tomatoes, cut in ½
1 cup Zucchini, cut in half and sliced ¼” thick
1 oz. Feta Cheese, crumbled
Salt and pepper to taste
Instructions
In a medium bowl add eggs and beat with a fork or whisk until foamy.
Over medium-high heat add olive oil to an 8-10” nonstick or iron skillet.
Add zucchini and sauté for 3-4 minutes. Add tomatoes and sauté an additional 1 minute.
Reduce heat to low-medium and add eggs. Using a rubber spatula gently fold all ingredients constantly scraping along the bottom and sides of the skillet. Cook eggs until set and no longer runny.
Transfer to a serving dish, sprinkle with feta cheese, salt and pepper to taste and serve.
